Raspberry Salad with Feta, Toasted Walnuts and Mint

Our fall raspberry season is in full force, so we created our Raspberry Salad with Feta, Toasted Walnuts and Mint to let this tasty berry shine!

The salad itself is very simple. Start with a salad mix (we’re using our organic fall salad mix), then sprinkle with fresh raspberries (also using our organic raspberries), crumbled feta, toasted walnuts, and a sprinkling of mint leaves. 

For the dressing, we first tried the same red wine vinaigrette we use for our Peachy Perfect Salad, and that was good, but we decided a housemade Raspberry Vinaigrette (made with freshly harvested organic raspberries!), would be even better. And we were right!

This fruit-topped lettuce salad isn’t as sweet as our Apple Harvest or Blueberry Pecan, but I’m okay with that. I love this salad’s bright flavor, and the way the mint and raspberries, feta and walnuts, all complement each other. Enjoy!

Raspberry Salad with Feta, Toasted Walnuts, and Mint

Ingredients

For Salad

  • 1 pound salad mix
  • 12 oz walnuts toasted
  • 18 oz fresh raspberries
  • 6 oz crumbled feta
  • 1 oz fresh mint leaves only

For Raspberry Vinaigrette

  • 1.5 cups fresh raspberries
  • 6 tbsp lemon juice
  • 6 tbsp white wine vinegar
  • 6 tbsp avocado oil
  • 3 tbsp honey
  • 3 tbsp sugar
  • 1/4 tsp salt

Instructions

For Raspberry Vinaigrette

  • Place all ingredients in food processor or blender. Blend thorougly until all ingredients are combined.

For Salad

  • Place salad mix in large bowl. Top with raspberries, feta, toasted walnuts, and mint leaves. Drizzle Raspberry Vinaigrette over top. Alternatively, portion out the salad mix into 6 individual bowls and divide toppings accordingly. Drizzle with dressing, top with croutons if desired, and enjoy!
